To dealers, a George is a generous tipper, the player every table hopes will sit down. The name points to George Washington, whose portrait appears on the US one-dollar bill: a player who hands out enough “Georges” earns the name himself. So if a dealer calls someone George, it is a compliment, whatever that player’s real name happens to be.
The slang comes in grades for the most generous players, from a “super George” to a “king George” and beyond. The opposite, a player who never tips at all, is known as a stiff. In many casinos, dealers pool their tips, called tokes, and share them across the team, so one George can lift the whole shift. The term is sometimes heard outside casinos as well.
