Third street is the first betting round in Seven Card Stud. At this point every player holds three cards, which is all you need to know to understand the name.
The later rounds follow the same pattern: fourth, fifth, sixth and seventh street, each named after the number of cards a player holds at that stage. Stud players use the labels to explain when an action took place, saying, for example, that they raised on third street or folded on sixth.
